Each year I try to think of a creative twist to put on a traditional dessert for the Christmas season. Since I had some already prepared tart shells in the freezer at home, & since they were an amazing deal, & since I bought way too many, I was determined to use them! I was trying to think of some traditional holiday images, and I immediately though of holly {not to be confused with its relative, by association only, mistletoe}. This recipe is quick, easy, and delicious! I know you will love these Holly Tarts for the Holidays :)

I knew immediately that I wanted to use raspberries for the berries in the holly, but it took me a while to think up the mint addition. I was originally searching out a flat green candy or treat, but my efforts and my searching at bulk barn were fruitless.

That’s when I saw the herbs at the grocery store and had my “ah-ha!” moment. Mint is the perfect addition to a sweet dessert :)

I bought the tart shells already prepared, but you are more than welcome to make your own for this treat if you have a good tart dough recipe!

I simple prepared the tarts (as per the package), mixed up the filling, and then added the fruit and mint on top. The entire recipe took only 20 minutes (if you prep other things while the shells bake), and tastes wonderful!
