Ingredients for Black Bean and Cilantro Quesadillas
- Tortillas
- Prepared Chicken Strips (1-2 breasts)
- 1/2 can black beans
- 1 tbsp cilantro
- zest and juice of 1/2 lime
- 1/2 tbsp oregano
- 1 tsp salt
- Serve with salsa, sour cream or guacamole (if desired)
Mix cilantro, black beans (drained and rinsed), lime juice & zest, oregano, and salt in food processor until well blended.
Spread black bean mixture on half of tortillas. Add chicken and cheese. Fold in half and place on baking sheet.
Bake at 400F for 5 minutes on each side.
Prepare guacamole, sour cream, and salsa for toppings. I used this EASY 5 minute guacamole recipe (also featuring cilantro!) with our quesadillas.
They take 25 minutes total to prepare and bake. You will NOT be disappointed if you try these at home!

Black Bean Quesadillas

Delicious meal idea! These black bean quesadillas can be easily modified for vegetarians, those who love spice, and other diets!
Ingredients
- Tortillas
- Prepared Chicken Strips (1-2 breasts)
- Shredded cheese
- 1/2 can black beans
- 1 tbsp cilantro
- zest and juice of 1/2 lime
- 1/2 tbsp oregano
- 1 tsp salt
- Serve with salsa, sour cream or guacamole (if desired)
Instructions
- Preheat oven to 400F
- Prepare chicken breasts by BBQing them, or frying them at a low temperature with oil until they are cooked through. When ready, slice into strips.
- Drain and rinse black beans.
- Mix black beans, chopped up cilantro, zest and juice of lime oregano and salt together.
- Add mixture to food processor and mix until well blended.
- Add mixture to half of a quesadilla. Top with chicken strips and cheese.
- Bake for 5 minutes on each side.
- Serve with salsa, sour cream, or guacamole, as desired.
